The Abode
The first Peruvian winery to integrate hospitality. Viñas Queirolo rises at the heart of the Ica valley, surrounded by eight hundred hectares of estate vineyards — syrah, malbec, torontel, albilla — with the desert always on the horizon. The architecture, in revised colonial lines, is generous and calm; the silence of the oasis is broken only by the seasonal labour of the vines. A wine-country destination before the term became common currency in Peru.
The Premium rooms, with terrace and vineyard views, are the correct choice; for groups, the Junior Suites. The restaurant Vista del Viñedo serves contemporary Peruvian cuisine with estate pairings — lamb braised in red wine, tiradito with a syrah reduction, ceviches with acholado pisco — on a wine list that draws only from the winery's own production. The guided tasting with the estate's winemakers, at sunrise, is central to the visit.
